Sambai asam udeueng

Asam Udeung atau Sambal Ganja (non narkotika) adalah masakan khas Aceh yang terbuat dari udang rebus yang dirajang kecil dan dibumbui dengan bumbu-bumbu bercita rasa asam dan pedas. Di salah satu rumah makan Aceh di Jakarta, asam udeung ini populer dengan sebutan sambal ganja. Hal ini disebabkan sama sekali bukan karena makanan ini mengandung ganja, melainkan karena sambal ini membuat ketagihan orang yang menyantapnya.

Asam udeung ini selain sebagai lauk penyerta untuk disantap dengan nasi hangat, akan tetapi juga cocok untuk dipakai sebagai lauk penyerta Sie Reuboh (daging rebus) - masakan khas aceh lainnya. Pilihan dagingnya antara lain adalah kambing atau sapi yang direbus dengan cuka, lalu dikeringkan dan digoreng garing. Masakan ini bisa disetarakan dengan sejenis dendeng, tetapi dengan bagian dalam daging yang masih lembap.

Secara cita rasa, asam udeung memadukan rasa asam yang berasal dari bahan baku utamanya, belimbing wuluh, serta rasa pedas yang berasal dari cabai rawit dan lada. [1]

Cara Membuat

Campur semua bahan baku, tambahkan garam secukupnya, lalu ulek atau blender kasar. Salah satu rumah makan di Aceh membuat bahan baku udangnya disangrai terlebih dulu sebelum dicampurkan dengan belimbing wuluh. [1]
