Tahu gejrot (Hanacaraka: ꦠꦲꦸꦒꦼꦗꦿꦺꦴꦠ꧀) adalah makanan khas Cirebon, Jawa Barat, Indonesia yang terbuat dari tahu dan bumbu lainnya.[1] Tahu gejrot terdiri dari tahu yang sudah digoreng kemudian dipotong agak kecil lalu dimakan dengan kuah yang bumbunya terdiri dari cabai, bawang putih, bawang merah, dan gula.[1] Biasanya disajikan di layah kecil.[1] Tahu gejrot juga merupakan jajanan khas daerah Cirebon yang digemari di kalangan anak-anak dan orang dewasa, karena sensasi rasanya yang khas.[1] Tahu gejrot adalah tahu yang dipotong kecil-kecil kemudian ditaruh di atas piring kecil dan tahu yang digunakan adalah tahu sumedang.[2] Saat ini, tahu gejrot telah menyebar ke seluruh Indonesia seperti Jakarta dan sekitarnya, Bandung, Malang, Surabaya, dan beberapa tempat di kota-kota besar lainnya di Indonesia.[3]

Pembuatan dan penyajian

Proses pembuatan tahu gejrot dimulai dengan menyiapkan tahu sumedang dan merendamnya ke dalam air matang kemudian diberi garam halus kurang lebih selama 20 menit.[1] Setelah tahu direndam, kemudian digoreng dan ditiriskan.[1] Saus tahu gejrot dibuat dari cabai merah, cabai rawit, bawang merah, cabai hijau, gula merah, dan garam, dengan tambahan air asam, air dan kecap manis.[4] Setelah itu, tahu goreng biasanya diletakkan di atas piring saji, dengan ditaburi bawang goreng dan ditambah saus.[4]

Penjualan

Para pedagang tahu gejrot terdiri dari kalangan perempuan atau laki-laki.[1] Biasanya, penjual laki-laki menggunakan pikulan untuk membawa barang dagangannya, sedangkan menggunakan tampah yang diusung di atas kepala bagi penjual perempuan.[1] Para pedagang tahu gejrot sangat mudah ditemui utamanya di sekitar kota Cirebon dan juga beberapa daerah-daerah lain di Indonesia karena termasuk makanan ringan yang cukup populer.[1]
