Bubur ketan hitam (disebut juga bubur pulut hitam atau bubur injit) merupakan hidangan penutup, dengan cita rasa manis, yang terbuat dari beras ketan yang direbus dengan air berlebih hingga lunak, dan biasa disajikan dengan santan.[1] Bubur ketan hitam merupakan sebutan yang dipakai di Indonesia, terutama di Pulau Jawa.[1] Di daerah dengan pengaruh budaya Melayu yang kuat, bubur ini disebut "bubur pulut hitam".[1] Sementara di Bali, Nusa Tenggara Barat, dan Nusa Tenggara Timur; nama dari makanan ini adalah "bubur injit".[1][2] Makanan ini dapat disajikan dingin maupun hangat.[3]

Sejarah

Bubur ketan hitam juga sudah ada sejak zaman kerajaan Majapahit, sebagai hasil olahan pangan yang saat itu cukup mahal jika dibandingkan dengan beras biasa. Dahulu, bahan ketan adalah salah satu bahan pangan khas Indonesia yang sudah ada sejak zaman Majapahit.

Pada awalnya ketan hitam hanya dikonsumsi para raja, namun seiring perkembangannya, ketan hitam sudah lebih mudah didapat dengan harga yang terjangkau sehingga bubur ketan hitam bisa dinikmati siapa saja.

Bubur ketan hitam memiliki makna filosofis kebersamaan dan menyatukan. Karena sifat beras ketan yang lengket, sering kali beras ketan dimasak untuk acara seperti pernikahan dengan doa dan harapan bisa merekatkan tali kasih sepasang pengantin dan bisa menjalani pernikahan yang awet. Dengan rasa manis dan gurih, bubur ketan hitam menjadi makanan khas yang tak bisa diabaikan perannya dalam tradisi Jawa.[4][5]

Bahan

Bahan utama untuk membuat bubur ketan hitam adalah beras ketan hitam, gula merah, daun pandan, dan santan kelapa.[3][1] Gula pasir dapat digunakan untuk menggantikan gula merah.[1]

Variasi

Berbagai variasi dapat diaplikasikan dalam penyajian hidangan bubur ketan hitam.[3][2][6][7] Beberapa penulis resep menambahkan ketan putih sebagai campuran beras ketan hitam.[2][7] Lebih jauh lagi, berbagai pelengkap dapat ditambahkan sesuai selera.[3][2][6][7] Bahan pelengkap yang dapat ditambahkan ke dalam bubur ketan hitam antara lain adalah biji jagung, kastanya, roti tawar, dan ubi jalar.[3][6][7][2]

Cita rasa

Tepung beras ketan bersifat lengket bila direbus.[8] Penambahan santan yang sering dilakukan dapat mengurangi kelengketan dari makanan tersebut.[8] Bubur ketan hitam mempunyai warna yang hitam legam, dan cita rasa yang dinilai gurih.[8]

Manfaat

Ketan hitam mampu mencegah diabetes, ketan hitam mempunyai sifat anti-inflamasi dan kaya antioksidan, jika dikonsumsi jangka panjang akan bermanfaat untuk mencegah Alzheimer dan diabetes. Dapat membantu menjaga kesehatan kulit secara alami. Pekatnya ketan hitam mampu menggantikan sel kulit mati dengan sel kulit baru yang lebih halus dan lembut, serta mengandung pelembap alami bahkan dapat mendinginkan kulit.
