Sambalingkung

Sambal lingkung atau sambal lingkong adalah makanan khas dari Palembang. Meski disebut sambal, sambal ini sebenarnya semacam abon atau serundeng yang terbuat dari ikan. Sambal lingkong kebanyakan terbuat dari ikan tengiri, santan kelapa, dan rempah-rempah lainnya. Biasanya dimasak saat menjelang hari raya Idulfitri maupun Iduladha, atau untuk jamuan makanan pada acara hajatan. Bila dulu, sambal lingkong dimasak secara massal, karena proses masaknya yang agak lama, ibu-ibu yang bertetangga mambuat kesepakatan untuk berbagi bahan dan jatah dan proses pembuatannya dikerjakan secara gotong royong. Dengan bergantian mengaduk adonan sambal lingkong yang berkuah hingga kering, dengan wadah kuali yang berukuran besar. Sambal ini biasanya dimakan bersama ketan.
