ג'ורג' הויט ויפל (באנגלית: George Hoyt Whipple‏; 28 באוגוסט 1878, אשלנד, ניו המפשייר, ארצות הברית - 1 בפברואר 1976, רוצ'סטר, ניו יורק, ארצות הברית) היה רופא, חוקר ומרצה אמריקאי, חתן פרס נובל לפיזיולוגיה או לרפואה לשנת 1934 יחד עם ג'ורג' ריצ'רדס מיינוט וויליאם פרי מרפי "על גילוי טיפול בכבד לריפוי מאנמיה".

ויפל למד באוניברסיטת ייל ובאוניברסיטת ג'ונס הופקינס שבבולטימור, שם הוא סיים את לימודיו בשנת 1905. הוא עבד במחלקת הפתולוגיה באוניברסיטת הופקינס, ולאחר מכן עבד כפתולוג בבית חולים בפנמה בשנים 1907–1908. אחרי שהות בפנמה חזר לבולטימור והיה שם מרצה בשנים 1910–1914.

בשנת 1914 התמנה ויפל לפרופסור למחקר רפואי ולמנהל קרן הופר למחקר רפואי בבית הספר לרפואה של אוניברסיטת קליפורניה.

תחום המחקר העיקרי שלו היה אנמיה ופיזיולוגיה ופתולוגיה של הכבד. הוא היה הראשון אשר תיאר ב-1907 את מחלת ויפל וגילה את מין החיידק הגורם למחלה זו.

לבקשת אברהם פלקסנר, שעשה עבודה חלוצית בתחום של חינוך רפואי, ונשיא אוניברסיטת רוצ'סטר, ראש ריס, מונה ויפל בשנת 1921 לדיקן בית הספר לרפואה החדש שעדיין לא נבנה ברוצ'סטר. ויפל שימש דיקן בית הספר עד לשנת 1954, אך המשיך לעבוד שם במשך שארית חייו. הוא נפטר ב-1976 בגיל 97.
