Günter Blobel (21. toukokuuta 1936 Waltersdorf, Saksa – 18. helmikuuta 2018 New York, New York, Yhdysvallat[1]) oli saksalaissyntyinen yhdysvaltalainen biologi. Blobel syntyi silloisen Preussin Ala-Sleesian provinssiin kuuluvassa Waltersdorfissa (nykyinen Niegosławice). Hän valmistui Tübingenin yliopistosta vuonna 1960 ja väitteli tohtoriksi Wisconsinin yliopistosta Madisonissa vuonna 1967. Vuonna 1986 hänet nimitettiin Howard Hughesin lääketieteelliseen instituuttiin. Vuonna 1999 Blobel sai Nobelin lääketieteen palkinnon siitä, että hän keksi vastasyntetisoituneiden proteiinien sisältävän tunnisteet, jotka ohjaavat näitä oikeaan paikkaansa solussa.

Blobel tuki aktiivisesti Dresdenin jälleenrakentamista. Vuonna 1994 hän perusti ei-kaupallisen ”Friends of Dresden” -seuran ja toimi sen puheenjohtajana. Hän lahjoitti kaikki Nobelin palkinnosta saamansa rahat Dresdenin kunnostukseen, eritoten Frauenkirchen vuonna 2005 valmiiksi saatuun kunnostukseen ja uuden synagogan rakentamiseen.

Vuodesta 2003 lähtien Blobel oli New Yorkissa sijaitsevan Rockefellerin yliopiston palveluksessa.
