Touciño

Touciño (arriba) e touciño entrefebrado (debaixo).

O touciño (Gl-touciño.ogg pronunciación (axuda · info)) ou lardo é a graxa que ten o porco debaixo da pel, particularmente a do abdome e a do lombo.[1] O sinónimo lardo úsase especialmente para referirse ao touciño do xamón.[2]

Touciño entrefebrado (beicon).

É un produto cárnico que comprende a epiderme e as capas de tecido adiposo que se encontran baixo dela, na derme. Fundido, obtense a manteiga de porco.

Ás veces está entrefebrado, é dicir, que ten febras de carne ou magro. Daquela adoita chamarse touciño entrefebrado,[3] bacon, ou beicon.[4].

É un alimento de gran valor enerxético, unhas 9 kcal/g (37,7 kJ/g).

Etimoloxía

Semella que a súa orixe está no latín tucca ‘caldo manteigoso’, que daría lugar a tuccetum ‘carne salgada’ e no latín vulgar a *tuccinum (lardo)[5].

Consumo

Dátiles con beicon.

En Galicia adoita encontrarse nos mercados (e consumirse) fresco ou conservado salgado e, modernamente, na industria, afumado (especialmente o béicon).

O touciño pode comerse cru, frito, asado, grellado ou formando parte do cocido,[6] ou utilizado como ingrediente coadxuvante na saborización de pratos (por exemplo, nos arroces e nas pizzas). Así mesmo úsase para envolver pezas de carne en asados, especialmente de aves de caza, ou salchichas ou dátiles en tapas.
