Un suisse ou pavé suisse, pain suisse, petit pain suisse, brioche suisse, pépito, plié, drop, cravate[1]..., est une viennoiserie rectangulaire d’origine française[2],[3],[4], variante de pain au chocolat ou du pain aux raisins, à base de pâte levée feuilletée fourrée de crème pâtissière à la vanille et de pépites de chocolat.

Histoire

Tout comme les croissants et pains au chocolat qui sont des viennoiseries créées par le chef-pâtissier autrichien August Zang pour sa Boulangerie viennoise créée vers 1837 rue de Richelieu à Paris, le pain suisse est une pâtisserie typiquement française[5]. Très répandu dans de nombreuses régions françaises, il n’est pas originaire de Suisse, malgré son nom, où il est presque inconnu[6] (à l'image inverse de la fondue bourguignonne qui n'est pas d'origine française mais suisse). Le pain suisse est surtout présent dans les boulangerie parisienne[7].

Variante à base de crème pâtissière des pain aux raisins, Strudel, ou chinois, il existe des variantes avec des raisins secs à la place du chocolat[8],[9].
