Kesra (arabieraz: خبز كسرة‎) Argeliako ogi zapal tradizional bat da[1]. Su gogorrean kozinatzen da tajin batean.

Historia eta izena

Amazig jatorriko ogia da, oso antzinakoa. II. mendeko Apiano historialariak dagoeneko aipatzen du Eszipion Emilianok jan zuela Masinisaren aurkako guda irabazi ondoren.

Kesra izenak arabierazko "hautsi" hitzean du jatorria, ogi hau eskuez hautsi egiten baita labanaz moztu beharrean.

Irin larriz, oliba olioz (edo gurin urtuz), gatzaz eta uraz egiten da masa[2]. Legamia gehitzen zaio eta baita zaporea emango dion osagairen bat ere, kuminoa edo laranjondo lore ura esate baterako.[3]

Erabilera

Ogi zapal izanik plateren osagarri gis erabiltzen da. Hotza edo beroa jaten da, zerbaitekin igurzteko, betetzeko edo bustitzeko erabiltzen da, hala gosaritan nola askaritan.
