Elbasan tava, haşlanmış kuzu etinin yoğurtlu bir sosla fırınlanmasıyla yapılan, geleneksel bir Arnavut yemeğidir. Adını Arnavutluk'a bağlı Elbasan şehrinden alır.[1] Türk mutfağında da yapılır.

Hazırlama

Kuşbaşı kuzu eti soğan, defne yaprağı, tane karabiber gibi tatlandırıcı malzemelerle haşlanır ve piştikten sonra lif lif didiklenir. Bir başka hazırlama türü olarak etler soğanla kavrulur, fakat didiklenmez.

Bir fırın tepsisine alınan etlerin üzerini kapamak için Süzme yoğurt ile bir sos hazırlanır. Bu sosun içinde mutlaka un, yumurta ve yoğurt bulunur. Az miktarda limon, soğan ve baharat da eklenebilir. Sosun kalınlaşması ve un tadının gitmesi için karışım düşük ateşte bir müddet pişirilir. Sos ısıtılacaksa, yumurtanın sarısı sos kalınlaştıktan sonra yavaş yavaş yedirerek eklenir. Buradaki amaç yumurtanın pişip sosun içinde parça parça katılaşmasını engellemektir. Yoğurtlu sos yerine fırın yemekleri için hazırlanmış beşamel sos da kullanılabilir.

Tepsiye alınmış etler sosla kaplanarak fırında üzeri hafif renklenene kadar pişirilir. Dilimlere ayrılarak servis yapılır.
