Glicerolna dehidrataza (EC 4.2.1.30, glicerolna dehidraza, glicerolna hidrolijaza) je enzim sa sistematskim imenom glicerol hidrolijaza (formira 3-hidroksipropanal).^[1]^[2]^[3]^[4] Ovaj enzim katalizuje sledeću hemijsku reakciju

glicerol

\rightleftharpoons

3-hidroksipropanal + H₂O

Za dejstvo ovog enzima je neophodan kobamidni koenzim.
