Choi pan

Chai kue khas Pontianak.

Choi pan merupakan hidangan Tionghoa yang dikenal di beberapa daerah seperti Bangka-Belitung dan Kalimantan Barat. Choi pan (菜粄) merupakan istilah bahasa Hakka yang berarti "kue yang berisi sayuran". Dalam bahasa Tiochiu hidangan ini disebut chai kue (菜粿) yang artinya kurang lebih sama.

Sepintas bentuknya mirip dengan pastel atau kroket, tetapi pengolahannya berbeda, jika pastel dan kroket harus digoreng terlebih dahulu, maka choi pan harus dikukus sebelum disajikan. Isi choi pan dapat berupa bengkuang, talas, maupun kucai. Kulitnya yang tipis terbuat dari tepung beras dengan pelengkap bawang goreng di atasnya.[1]

Choi pan umumnya dikenal di daerah-daerah lain yang memiliki komunitas Tionghoa. Di Bangka Belitung, kue ini juga dinamakan choi pan oleh penutur Hakka. Nama lainnya adalah choi-pau-pan atau sam-kok-pan dengan bentuk segitiga yang disantap dengan cuka pedas manis. Di Medan, hidangan ini disebut chai pao yang dibuat dengan cara digoreng. Seiring berjalannya waktu, terdapat beragam variasi isian chai kue antara lain isian kari ayam, udang, ebi kukus, jamur, dan potongan daging.[2]
