Veri ruokana

Verestä tehtyä mustamakkaraa ja puolukkahilloa.

Verta käytetään monen ruokalajin aineksena. Veressä on runsaasti proteiinia ja rautaa.[1]

Verestä valmistetaan ympäri maailmaa verimakkaraa. Tunnettuja verimakkaroita ovat brittiläinen mustamakkara black pudding, espanjalainen pehmeä verimakkara morcilla, virolainen verivorst[1] ja tamperelainen mustamakkara[2] sekä aiemmin suosittu palttu[3].

Verilettuja syödään Suomessa ja muissa Pohjoismaissa. Puolalaisen czarnina-keiton ainesosia ovat veri, liha ja hedelmät. Italialaiset sekoittavat verta sanguinaccio-suklaavanukkaaseen. Ranskassa verta voidaan laittaa pataruokiin, kuten viinikukkoon.[1] Muita veriruokia ovat kampsu ja mustakeitto.

Tansanialaiset maasait juovat lehmän kaulasta vuodatettua tuoretta verta maitoon sekoitettuna. Inuitit juovat hylkeen verta.[1]

Aasiassa käytetään perinteisesti ankan tai sian verta. Kiinassa veren annetaan hyytyä, minkä jälkeen se viipaloidaan. Taiwanissa veri sekoitetaan riisiin, höyrytetään, maustetaan ja muotoillaan riisikakuiksi, joita myydään katuruokana. Pohjois-Vietnamissa verta jäähdytetään, hyydytetään ja käytetään raakakeittoihin.[1]
