Alfa-tokoferoli on yksi E-vitamiinin muodoista, joka ensisijaisesti imeytyy ja kertyy ihmisten elimistöön. Alfa-tokoferolin E-koodi on E307. Alfa-tokoferolissa on kolme erillistä keskusta, joten kyseessä on kiraalinen molekyyli. Alfa-tokoferolia käytetään ruuissa hapettumisenestoaineena ja sen suurin sallittu käyttömäärä vuorokautta kohden eli ADI-arvo on 2 milligramma jokaista kilogrammaa kohden. Alfa-tokofenolia saa käyttää kaikissa rasvaa sisältävissä elintarvikkeissa, joissa myös muiden lisäaineiden käyttäminen on voimassa olevien säädösten mukaan sallittua.[1]

Alfa-tokoferoli on väritöntä veteen liukenematonta öljyä, joka kuitenkin liukenee dietyylieetteriin, asetoniin, trikloorimetaaniin ja öljyihin. Yhdiste kestää lämpöä suhteellisen hyvin ellei happi tai valo pääse vaikuttamaan siihen samanaikaisesti. Alkalit ja hapettimet hajottavat alfa-tokoferolia helposti.[2]
