Papadam

Papadam plater bat.

Papadam edo popadom Indiako gastronomian oso ohikoa den ogi zapal eta mehe bat da. Vigna mungo babarrun beltzen irina erabiltzen da, eta normalki frijituta ateratzen da, nahiz eta batzuetan beroarekin lehortuta ere egiten den, kurruskaria izan arte. Batzuetan dilistak, garbantzuak, arroza, tapioka, artatxikia edo patata erabiltzen dira mungo babarrunen ordez[1]. Papadama beste elikagaien ondoan atera ohi da India, Pakistan, Nepal, Sri Lanka eta Karibean, edo pikatzeko elikagai bezala, maiz chutney batekin, tipula edo piperrekin. Curry baten alboan jartzea ere ohikoa da.
