Francisco Josías de Sajonia-Coburgo-Saalfeld (Saalfeld, 25 de septiembre de 1697-Rodach, 16 de septiembre de 1764) fue un duque de Sajonia-Coburgo-Saalfeld.
Era el cuarto hijo varón que había sobrevivido a la infancia del duque Juan Ernesto IV de Sajonia-Coburgo-Saalfeld, y el tercer hijo varón del matrimonio de su padre con su segunda esposa, Carlota Juana de Waldeck-Wildungen.
Durante su juventud, Francisco Josías sirvió en el Ejército Imperial.
La muerte de sus dos hermanos mayores, Guillermo Federico (28 de julio de 1720) y Carlos Ernesto (30 de diciembre de 1720), lo hicieron el segundo en la línea de sucesión al ducado de Sajonia-Coburgo-Saalfeld, precedido solo por su medio hermano, Cristián Ernesto.
Cuando Cristián Ernesto contrajo matrimonio desigual en 1724, Francisco Josías se proclamó único heredero del ducado. El testamento de su padre (1729), sin embargo, le obligaba a gobernar conjuntamente con su hermano. En 1735, el apoyo de la línea de Sajonia-Meiningen le permitió gobernar efectivamente sobre Coburgo por propio derecho, y tras la muerte de Cristián Ernesto en 1745, como único duque. Ya en 1733, proclamó la primogenitura en el ducado, que sin embargo solo fue confirmada por el emperador en 1747. Desde 1750 hasta 1755, fue regente del ducado de Sajonia-Weimar en nombre de Ernesto Augusto II.
En Rudolstadt el 2 de enero de 1723, Francisco Josías contrajo matrimonio con la princesa Ana Sofía de Schwarzburgo-Rudolstadt. Tuvieron ocho hijos:
