Ikan hitaman (kanan)

Penghitaman adalah teknik memasak yang digunakan dalam penyiapan ikan dan makanan lain. Teknik ini dipopulerkan oleh jurutama masak Paul Prudhomme dan sering dikaitkan dengan masakan Cajun.[1] Makanan dicelupkan ke dalam mentega cair dan kemudian ditaburi campuran herba dan rempah-rempah, biasanya gabungan timi, oregano, cabai, lada, garam, bubuk bawang putih, dan bubuk bawang bombai.[2] Kemudian, makanan itu dimasak dalam wajan besi tuang yang sangat panas.[2][3] Ciri khas warna cokelat-hitam pada kerak dihasilkan dari gabungan padatan susu kecokelatan dari mentega dan bumbu gosong.[4]

Meskipun resep asal menggunakan ikan merah (red drum),[3] metode penyiapan yang sama dapat diterapkan pada jenis ikan lain dan sumber protein lain seperti steik, ayam, kutlet, atau tahu.
