Lubang keju

Emmentaler dengan lubang-lubang

Lubang keju adalah lubang-lubang bulat yang menjadi ciri khas keju Swiss[1] (seperti keju Emmentaler) dan beberapa keju Belanda. Lubang-lubang tersebut adalah gelembung-gelembung dari gas karbon dioksida. Gas tersebut dihasilkan oleh berbagai spesies bakteria pada keju tersebut.[2]

Keju Swiss

Pada keju Swiss, bentuk lubang-lubang dihasilkan dari kegiatan bakteria asam propionik (propionibacteria), terutama Propionibacterium freudenreichii subsp. shermanii.[3][4] Bakteria tersebut mengubah asam laktik menjadi asam propionik dan karbon dioksida, menurut rumus berikut:

3 Laktat → 2 Propionat + Asetat + CO2 + H2O[5]

Keju Belanda

Pada keju Belanda, CO2 yang membentuk lubang dihasilkan dari matabolisasi satrit oleh sitrat positif ("Cit+") dari laktososi.[1]
