Kẹo gương là một kẹo đặc sản có nguồn gốc từ huyện Tư Nghĩa, tỉnh Quảng Ngãi, Việt Nam, có hương vị thơm ngon, lạ miệng, rất được ưa thích. Kẹo trong như gương, giòn tan, rất dễ vỡ nên được gọi là kẹo gương.

Nguồn gốc

Kẹo gương từ xưa được sản xuất ở Thu Xà (xã Nghĩa Hoà, huyện Tư Nghĩa), một phố cổ của người Minh Hương từ nhiều thế kỷ trước, cách thành phố Quảng Ngãi 10 km về phía biển.[1]. Hiện nay, nghề sản xuất kẹo gương được phổ biến khắp nơi trong tỉnh, nhưng chủ yếu tập trung ở khu vực thành phố Quảng Ngãi.[2]

Có người lưu truyên câu chuyện cho rằng kẹo gương Quảng Ngãi vốn có nguồn gốc từ bên Triều Châu, Trung Quốc được du nhập đến cảng Thu Xà từ thế kỷ 17 với tên gọi là "kia thứng" hay "pô lý thứng".[3] Kẹo gương từng được vua Lê Trung Tông dùng làm món ăn tráng miệng trong triều.[3]

Cách làm

Kẹo gương được làm từ đường cát, mạch nha và đậu phộng. Đầu tiên, người làm kẹo phải đổ đường cát đã xên đặc, mạch nha, mỡ heo vào trong lòng chảo rồi đun lửa lớn, phải khuấy nhanh và đều tay cho dung dịch khỏi bị cháy. Đun cho đến khi keo lại màu vàng nhạt rồi nhanh tay cho xuống bếp, sau đó cho đậu phộng đã rang chín vào trộn đều rồi đổ ra tấm tôn. Cuối cùng, dùng ống nứa lăn cho mỏng đều, để chừng 20 phút là có mẻ kẹo đông cứng và trong suốt rồi cắt thành miếng nhỏ.[2]

Kẹo gương nếu để quá 10 ngày kẹo sẽ có vị chua và mất đi hương vị thơm ngon ban đầu.[3]
