Pampushka (Ukrainian: пампушка uk, pl. пампушки pampushky; diminutive of pampukh or pampukha[1][2]) is a small sweet bun or doughnut. It is a part of the Ukrainian cuisine.[3][4][5][6]

Etymology

The Ukrainian word pampukh comes from the Polish word pampuch and from the German word Pfannkuchen, which means pancake.[2] The word is similar to the English word "pancake".

Varieties

Pampushky are made of yeast dough from wheat, rye or buckwheat flour. Traditionally, they are baked, but may also be fried.[3][4][5][6] Savoury pampushky have no filling. They are usually seasoned with garlic sauce and is served as a side dish with red borscht or yushka.[3][5][6][7] Sweet pampushky is filled with fruits, berries, varenye, povydlo, or poppy seeds, and topped with powdered sugar.[4][7][8]

Pampushka is also called as a Ukrainian version of dinner rolls.[9]

History

According to William Pokhlyobkin, the trick of making pampushky is related to German cuisine, and it is said that these buns were created by German colonists in Ukraine. They spread throughout the country in the second half of the 19th century and later reached the status of a Ukrainian traditional dish.[6]

Since 2008, Pampukh Festivals have been organized during Orthodox Christmas (Orthodox Christmas is in January as the Orthodox Church follows the Julian calendar) every year in Lviv.[10][11] During the festival in 2012, a Guinness world record was set by building the world's largest mosaic made of doughnuts.[12]
