Spelta[1][2] (Triticum spelta, sin. Triticum aestivum subsp. spelta[3]) – miglinių šeimos augalų rūšis, grūdinė kultūra.

Spelta greičiausiai atsirado susikryžminus dvigrūdžiams kviečiams (Triticum dicoccum) ir laukinei Aegilops tauschii rūšiai arba paprastajam kviečiui (Triticum aestivum). Gali būti, kad daug vėliau Europoje atsiradę speltos kviečiai patyrė antrinę hibridizaciją su Triticum aestivum.[4]

Spelta maistui pradėta naudoti jau bronzos amžiuje – archeologinių raidinių, liudijančių šių grūdų naudojimą, aptinkama nuo V tūkstantmečio pr. m. e. (Užkaukazėje ir Juodosios jūros pakrantėse).[5] Vėliau speltos grūdai plačiai auginti Europoje. Geležies amžiaus laikotarpiu tai buvo viena pagrindinių maistinių kultūrų Vakarų Europoje.[6] XIX–XX a. speltą išstūmė paprastieji kviečiai. Dabar šis augalas daugiau auginamas organiniuose ūkiuose.

Dabar speltos grūdai ir jų miltai vartojami įvairiems kepiniams (duonai, bandelėms, pyragams), košėms, makaronams. Speltos kviečių grūdų cheminė sudėtis skiriasi nuo paprastųjų kviečių. Jų grūduose randama 61 proc. angliavandenių, 16–17 proc. baltymų, 2 proc. riebalų, mineralinių medžiagų, vitaminų, geresnis glitimas, chemine sudėtimi jie artimi kietiesiems kviečiams. Miltai turi savitą pikantišką riešutų skonį.[7]
