La torta madeira[1] (madeira cake) è una torta tradizionale britannica composta da un sodo ma leggero pan di Spagna aromatizzato con limone.[2]

Etimologia e storia

La torta madeira prende il nome dal madera, un vino originario dell'omonimo arcipelago portoghese divenuto popolare in Inghilterra durante l'Ottocento e spesso servito assieme al dolce.[3][4][5][6]

La madeira deriva da un altro dolce le cui origini vengono fatte risalire al XVIII o XIX secolo.[3][7] Una delle prime ricette in cui viene spiegato come prepararla è riportata da Eliza Acton nel suo Modern Cookery for Private Families (1845):[8]

«Una buona torta madeira si prepara sbattendo quattro uova fresche fino a quando vengono alleggerite il più possibile. Mentre le si miscela, mettere lentamente nel contenitore i seguenti ingredienti nell'ordine in cui sono riportati: sei once di zucchero secco pestato e setacciato; altre sei di farina (se si desidera anche essiccata e setacciata); quattro once di burro fatto sciogliere da poco e non caldo; la scorza di un limone fresco; e, l'istante prima che la torta venga modellata, un cucchiaino di carbonato di sodio. Cuocere l'impasto per un'ora in forno a temperatura moderata.»

Oggigiorno, la torta madeira è spesso servita con tè o liquori e, più raramente, a colazione.[2][7]
