Mencencang

Mencencang atau konkase (Bahasa Prancis : Concassé, yang berarti menghancurkan atau menggiling) adalah istilah memasak yang berarti memotong bahan apa pun secara kasar , biasanya sayuran atau buah . Istilah ini terutama diterapkan pada tomat , di mana tomat cencangan adalah tomat yang telah dikupas, ungggul (biji dan kulitnya dibuang), dan dicencang sesuai ukuran yang ditentukan. Dimensi yang ditentukan dapat berupa dadu kasar, dadu kecil, dadu sedang, atau dadu besar. Penggunaan yang paling populer untuk tomat cencangan adalah bruschetta Italia , biasanya cencangan berbentuk dadu kecil yang dicampur dengan minyak zaitun dan kemangi segar, dan terkadang bahan lain seperti bawang merah, zaitun, atau ikan teri.

Tomat cencangan

Tomat cencangan umumnya juga ditambahkan ke dalam saus Béarnais untuk menghasilkan saus Choron yang biasa disajikan dengan hidangan lobster.[1]
