Xarope de millo

Xarope de millo sobre unha superfície escura.

O xarope de millo é un líquido doce e pegañento utilizado como adozante para as confeitarías. Faise a partir de amidón de millo e está composto principalmente de glicosa. Contén unha cantidade alta de maltosa e mercurio[1]. O xarope de millo úsase na industria culinaria para transformar a textura do alimento, aumentar volume, previr a cristalización do azucre e potenciar o sabor.

O termo xeral de xarope de glicosa úsase máis frecuentemente como sinonimo de xarope de millo, xa que nos Estados Unidos de América se fai normalmente a través do amidón de millo. Tecnicamente, o xarope de glicosa é calquera líquido de amidón hidrolisado de monosacáridos, disacáridos e sacáridos da cadea grande, e pódese facer a partir de calquera fonte de amidón: trigo, mandioca e pataca son as outras fontes máis usadas.
