Queixo de Arzúa-Ulloa

O queixo de Arzúa ou queixo de Ulloa é un queixo DO galego, de leite de vaca, que se acolle protexido pola denominación de orixe Arzúa-Ulloa. Tamén se lle pode chamar queixo de Lugo, queixo de Chantada ou queixo de Curtis nas diversas localidades da súa ampla zona de fabricación.

Zonas de fabricación

A elaboración de queixo amparado baixo a Denominación de Orixe Arzúa-Ulloa limítase a unha zona xeográfica específica que abrangue un total de 24 concellos.[1] A zona de produción recolle unha zona queixeira común, de gran tradición enmarcada entre as dúas ribeiras do río Ulla. Iso inclúe unha pequena parte da provincia da Coruña, á altura de Curtis, Sobrado, Boimorto e Vilasantar, estendéndose ata Arzúa, Melide, Toques, Santiso, Santiago de Compostela, e mais pola comarca da Ulloa luguesa seguindo aproximadamente a divisoria cara ao sur entre as provincias de Lugo e Pontevedra.

O leite que se produce na mesma área delimitada é a única materia prima válida para elaborar o produto.

Esta ampla zona ten unha configuración xeográfica moi variable, desde áreas moderadamente montañosas, con alturas arredor dos 1.000 metros, ata chairas e algunhas terras baixas. O terreo é de tipo fundamentalmente granítico e lousento. O clima é atlántico coas súas características de humidade e non alta temperatura, pero si abondosas choivas.

Características

O leite utilizado nos queixos de Arzúa-Ulloa é exclusivamente o de vaca. O contido en graxa varía entre 3,8 e 5,0%.

A súa carapa é extremadamente elástica e dunha cor amarela esluída. As pezas teñen forma lenticular biconvexa (de gran lentella con beiradas grosas). Ás veces presentan formas de casquete esférico case regular, cunha tendencia á forma clásica do queixo de tetilla, pero sen presentar a prominencia superior característica deste último. O tamaño máis corrente nos queixos de Arzúa-Ulloa é de 18 a 20 centímetros de diámetro e uns 6 a 8 centímetros de altura e os pesos varían de 500 a 2.000 gramos, e son moi excepcionais os que superan este peso máximo.

A pasta é branda e sen ollos, aínda que poden ter pequenos e escasos buratos debidos ás fermentacións e á falta de presión durante o moldeado. Isto considérase unha pexa. A súa consistencia mol no momento óptimo chega ás veces a ser cremosa, estendéndose no prato.

O olor e o sabor do queixo de Ulloa son francamente agradables, moi lixeiramente acedos, aromáticos e de olor láctico. Non se afuman, atan nin curan. Son perfectos para tomar con viños brancos suaves tipo ribeiro ou albariño. A temperatura óptima para o seu consumo é a ambiente entre 15 e 22 °C, e a data axeitada é a comprendida entre os 15 e 40 días da súa fabricación.
