Untxi-okela, untxikia edo untxi-haragia[1] untxitik eratorritako haragi-produktua da, hazkuntzaren bidez edo, historikoki, ehizaren bidez lor daitekeena. Haragi zuritzat hartzen da.[2] Nahiz eta ez den behiki, txerriki edo hegaztikia bezain ezaguna, Europan tradizioa du, batez ere landa-eremuetan.

Untxi-okelarekin egindako plater batzuk honako hauek dira: hasenpfeffera Alemanian, andrajos eta conill amb xocolata Espainian, cacciatorea Italian, cabidela Portugalen, rabbit pie Erresuma Batuan, ostropela Errumanian eta stuffat tal-fenek, Maltako plater nazionala. Aldiz, munduko beste toki batzuetan untxia maskotatzat hartzen dute eta bere kontsumoa tabutzat.

Untxi-okelaren ekoizpen industriala Italian, Frantzian, Venezuelan, Ipar Korean, Egipton, Espainian, Estatu Batuetan eta Txinan egiten dute nagusiki, azken hau munduko ekoizlerik handiena delarik (2010ean 690.000 t, munduko ekoizpenaren %40a).[3]

Sukaldaritzan, errea presta daiteke, labean, plantxan, salteatuta, gisatuta, konfitatuta, frijituta... gantz gutxi duenez haragi lehortzat hartzen dute. Kolesterolean ere baxua da, eta, beste haragi batzuetan ez bezala, digestio errazekoa da.[4]
