Ganatxea[1] edo ganaxea (frantsesetik Ganache, "Baraila"[2]) txokolatezko trufazko eta esnegainezko krema bat da (edo Crème fraîche), pralinen estalduren elaborazioan erabiltzen dena. Ganatxea, iluna edo argia izan daiteke, bere elaborazioan erabiltzen den fruitu lehor, esnegain eta txokolate kopuruaren arabera. Orohar, banilla, moka, ron edo likore anitzez usaingozatzen da.
