Bartholomæus Eustachius (1503-1574) (naskiĝis en San Severino Marche, en la 1503 - mortis en Fossombrone, en la 27-a de aŭgusto 1574) estis itala kuracisto kaj unu el la fondintoj de la moderna anatomio, fama dank'al siaj priskriboj rilate al la homaj oreloj, pulmoj kaj koro.

Krom siaj bonaj konoj pri la latina kaj la greka, li studis Medicinon en la Universitato de Padovo kie Andreo Vesalio kaj Mateo Realdo Colombo (1516-1559) estis liaj profesoroj, kaj ili tri refaris la sciencon de la anatomio de la modernaj tempoj.
