Amazake (甘酒, [amazake]) adalah sebuah minuman tradisional Jepang yang rasanya manis dan rendah atau tak-beralkohol (tergantung resep) yang terbuat dari nasi yang difermentasikan. Amazake berasal dari zaman Kofun, dan disebutkan dalam Nihon Shoki.

Amazake biasanya dijual di festival-festival rakyat yang disebut dengan matsuri, amazake memang paling tepat diminum di tengah cuaca dingin Jepang. Apalagi warna putih dengan aroma khas cukup mengundang selera untuk mencicipinya. Ketika dihidangkan dalam keadaan panas, uapnya saja pun sudah efektif mengusir hawa dingin.

Minuman ini terbuat dari perasan beras pembuatan sake yang ditambah dengan gula. Amazake mengandung kalori yang cukup cepat diserap oleh tubuh. Bagi yang senang dengan rasa manis, amazake juga dapat dihidangkan ketika berkemah maupun berkegiatan di luar rumah.

Amazake dipercaya sangat bernutrisi.[1]

Minuman yang mirip meliputi jiuniang dari Tiongkok, sikhye dari Korea, dan cơm rượu dari Vietnam.
