Sebuah contoh alkohol lemak

Alkohol lemak (atau alkohol rantai panjang) biasanya merupakan alkohol primer dengan berat molekul tinggi dan berantai lurus, tetapi juga dapat berkisar dari 4–6 karbon hingga 22–26 karbon, yang berasal dari lemak dan minyak alami. Panjang rantai yang tepat bervariasi tergantung pada sumbernya.^[1]^[2] Beberapa alkohol lemak yang penting secara komersial adalah lauril, stearil, dan oleil alkohol. Mereka adalah cairan berminyak (untuk jumlah karbon yang lebih kecil) atau padatan seperti lilin nirwarna, meskipun sampel yang tidak murni mungkin tampak kuning. Alkohol lemak biasanya memiliki jumlah atom karbon genap dan satu gugus alkohol (–OH) melekat pada karbon terminal. Beberapa tidak jenuh dan beberapa memiliki cabang. Mereka banyak digunakan dalam industri. Seperti halnya asam lemak, mereka sering disebut secara umum dengan jumlah atom karbon dalam molekulnya, seperti "alkohol C₁₂", yaitu alkohol yang memiliki 12 karbon, misalnya dodekanol.
