Hanabiramochi (葩餅 (Ba bính)?) là một loại bánh ngọt (wagashi) của Nhật Bản, thường được thưởng thức trong ngày đầu năm mới.[1] Món bánh này cũng được phục vụ trong tiệc trà đầu tiên trong năm.[2]

Nguồn gốc

Cái tên "hanabiramochi" có nghĩa đen là " mochi có hình cánh hoa". Hình thức ban đầu của Hanabiramochi là Hishihanabira, một món tráng miệng phục vụ Hoàng gia trong các sự kiện đặc biệt trùng với đầu năm mới.

Lần đầu tiên Hanabiramochi được làm ra là vào thời Minh Trị (8 tháng 9 năm 1868 – 30 tháng 7 năm 1912), nhưng giờ đây nó đã trở thành một loại bánh wagashi quen thuộc cho Năm Mới.

Hình thức

Hình dạng chính xác của hanabiramochi được xác định nghiêm ngặt theo truyền thống. Lớp vỏ bánh mochi màu trắng phẳng và tròn sẽ được gấp lại để tạo thành hình bán nguyệt và tâm bánh bắt buộc phải có màu hồng xuyên suốt, nhạt dần ở phần rìa màu trắng. Không giống như daifuku, bánh mochi loại này sẽ không được bịt kín hoàn toàn phần bên trong.

Ở giữa hanabiramochi là một lớp anko, một loại bột đậu ngọt và thường là loại màu trắng làm từ đậu xanh ngọt. Phần chính giữa là một dải mỏng sợi gobo (ngưu bàng) có hương vị ngọt ngào, nhô ra khỏi rìa hai bên của mochi .

Ý nghĩa và biểu tượng

Mỗi yếu tố trong bánh hanabiramochi đều có ý nghĩa:

Màu đỏ thể hiện qua chiếc bánh mochi trắng không chỉ phù hợp với lễ mừng năm mới mà còn gợi lên hình ảnh hoa mai/mận ( ume ) của Nhật, từ đó tượng trưng cho sự thuần khiết, kiên trì và đổi mới gắn liền với khí thế Năm Mới.

Gobo tượng trưng cho món cá ayu ép, một loài cá chỉ có ở Đông Á và tượng trưng cho lời cầu nguyện trường thọ của người Nhật Bản.
