Vanilin (3-metoksi, 4-gidrooksibenzaldegid), SHN8O, — vanil hidi keladigan rangsiz, achchiq kristall modda. Mol. m. 152,15. Suyuqlanish temperaturasi 81—83", qaynash temperaturasi 284-285° (SO2 muhitida). temperatura koʻtarilganda parchalanmay, sublimatlanadi. Suvda oz eriydi, spirt, efir, xloroform va b. erituvchilarda yaxshi eriydi. V. vanil mevalarida glikozid holida uchraydi. Sintetik V. lignindan, gvayakol hamda evgenoldan olinadi. Oziq-ovqat, atir-upa sanoatida va tibbiyotda ishlatiladi. V.ning qand kukuni bilan aralashmasi „vanil shakari“ muzqaymoq va turli qandolat mahsulotlari i.ch.da qoʻllanadi.
