Shirmal non – bugʻdoy uni, sut va yogʻdan tayyorlanadigan non turi[1].
Bu xamirturushsiz nonga oʻxshash non turi boʻlib, u Eronning koʻplab shaharlarida turli yoʻllar bilan pishiriladi va pishirishda ishlatiladigan ingredientlardan qatʼi nazar, u koʻpincha yumaloq, diametri 40 sm dan kam, rangi toʻq jigarrang boʻladi. Har bir shaharda Shirmal non va fotir oʻrtasidagi asosiy farq uning xamirini tayyorlashda suv oʻrniga sutdan foydalanishdir. Shuning uchun u sut bilan ishqalangan non deb ataladi.
Shirmal Xamedon, Qazvin va Semnanning ramzidir, ammo Shirmal noni Eronning koʻplab shaharlarining esdalik sovgʻasi sifatida tilga olinadi.
