Matbuha
Matbuha (arabcha: مطبوخة) — sarimsoq va chili qoʻshilgan pomidor va qovurilgan shirin qalampirdan tayyorlangan salat[1][2]. Ushbu nom arab tilidan olingan va „ovqatlanish“ degan maʼnoni anglatadi[3]. Salat, koʻpincha mezening bir qismi sifatida, ishtahani ochadi. Matbucha butun Magʻribda va Isroilda mashhur boʻlib, u yerda Marokash, Tunis, Jazoir va Liviyadan kelgan muhojir yahudiylar tomonidan tarqatilgan[4]. Shakshuka — pomidor va qalampir qoʻshilgan omlet[3].
Bu taomning yoshi hali aniq emas, chunki pomidor Sharqda faqat 1800-yillarda va Evropada Amerika kashf etilgandan keyin (1492-yildan oldin emas) paydo boʻlgan.
