Tandır

Tandır, ısınmak için kullanılan bir çeşit mangal. Yere çukur kazılarak yapılan özel bir fırına da tandır denir.

Eskiden kış soğuk geçen yerlerde alçak dört köşe bir masanın altına bir mangal konur ve bunun üzeri, tamamen örtecek, ateşten zarar görmeyecek şekilde pamuklu bir örtüyle kapatılırdı. Isınmak istiyenler bu örtüyü dizleri üzerine çekerler, ayaklarını mangalın etrafına koyarlardı. Sobaların olmadığı, mangalla ısıtmanın sağlanamadığı yerlerde bu usul çok kullanılırdı.

Bazı yerlerde altı ayaklı, altı köşeli veya yuvarlak ağaç masa altına kendine mahsus bir mangala ateş konmak suretiyle de tandır yapılırdı. Bunun üzerine çapraz yorganlar daha üstüne halılar örtülürdü. Ayaklar masaya doğru uzatılarak ısınılırdı. Bu ısınma esnasında güzel fıkralar ve masallar anlatılırdı. Böyle tandır başında anlatılan masal, hikâye vs.lere tandırname denirdi.

Yere kazılarak yapılan tandırların derinliği daha ziyade 130–150 cm olur. Çaplarıysa 50–65 cm arasında değişir. Sıkı çamur, saman ve keçi tüyü ile hazırlanan karışımla yapılan tandırlar, güneşte kurutulur. Daha sonra yere kazılan çukura yerleştirilir. Tandırda mangal kömürü, odun gibi yakacaklar kullanılır. Genellikle burada kuzu kızartılır. Tandırda kuzu etini pişirmek için önce et temizlenir. Bir çengele asılarak üzeri iyice kapatılıp, tandır içinde pişmeye bırakılır. Buna tandır kebabı adı verilir.
