Široka specifičnost poput pepsina A. Zgrušavanje mleka putem razlaganja jedne Ser-Phe105-Met-Ala veze u kapa-lancu kazeina

Ovaj neonatalni gastrični enzim efektivno zgrušava mleko i ima slabu opštu proteolitičku aktivnost.
