Queso Chihuahua

In Mexico, queso Chihuahua is a soft white cheese. It is usually sold in braids, balls, or round shapes and comes from the state of Chihuahua. In that area, it is often called queso menonita because it was first made by Mennonite communities. In the rest of the country, it is simply called queso Chihuahua.[1][2] Today, many different people make this cheese, and it is popular all over Mexico.[3]

Queso Chihuahua melts easily. Its taste is similar to a mild white Cheddar or Monterey Jack.[2] Because it melts so well, people use it in dishes like queso fundido (melted cheese dip), choriqueso (cheese with chorizo),[4] quesadillas, chilaquiles, and chili con queso.[5]

Officially, this cheese must follow certain rules: it cannot be more than 45% water and must have at least 26% fat and 22% milk protein.[6][7]
