A dory is a fish belonging to the order Zeiformes. The common name dory (from the Middle Englishdorre, from the Middle Frenchdoree, lit. "gilded one") is shared (officially and colloquially) by members of several different families of large-eyed, silvery, deep-bodied, laterally compressed, and roughly discoid marine fish.
John Dory is a delicious fish with delicate white flesh and a firm, flaky texture. A saltwater fish, it has a mild, slightly sweet flavor, and can be served sautéed, baked, steamed, poached, or even coated in breadcrumbs and fried.
