Invertază

Invertaza, denumită și β-fructofuranozidază, zaharază, glucosucrază, β-fructozidază, invertină, sau fructozilinvertază (EC 3.2.1.26) este o enzimă care catalizează hidroliza zaharozei din zahăr în fructoză și glucoză, fiind astfel un tip de hidrolază.[1][2]

Procesul de inversie a zahărului

Amestecul rezultat de fructoză și glucoză se numește sirop de zahăr invertit. Invertaza este o glicoproteină care hidrolizează (scindează) reziduurile β-fructofuranozidice terminale nereducătoare. Invertazele scindează legătura O-C(fructoză), în timp ce zaharazele scindează legătura O-C(glucoză).[3]
