Nudlar i ei suppe.

Nudel (frå tysk[1]) er ein matvare laga av mjøl, salt og vatn som ein kokar i vatn. Nudlar er gjerne forma som lange trådar. Dei kan også vera forma som små figurar, stjerner eller liknande.[2] Nudlar er utbreidde i asiatisk matlaging og i europeisk, særleg italiensk mat, der dei gjerne er kjende som pasta.

Ein kan laga nudlar av kveite, bokkveite, ris[2] og ein del andre ingrediensar. Til pasta er durumkveite vanleg. Blandinga blir kjevla eller valsa ut og skore opp i formene ein ønsker. Deretter blir dei kokte, nokre gonger i vatn med salt og matolje tilsett. Nudlane kan så tørkast for seinare bruk eller brukast til ulike matrettar.
