Il castella (カステラ?, kasutera) anche detto torta castella, è un wagashi giapponese simile al pan di Spagna. Il suo nome deriva dal portoghese pão de Castela, che significa "pane della Castiglia".

Storia

Il dolce fu importato in Giappone da alcuni marinai e missionari portoghesi che, durante il sedicesimo secolo, raggiunsero Nagasaki e da qui il dolce si diffuse nel Sol Levante[1] e in seguito anche in altri paesi fra cui la Corea[2] e Taiwan.[3] Oggi il castella è un dolce popolarissimo cibo da strada servito in tutto il Giappone e spesso consumato durante le celebrazioni. Viene spesso accompagnato con il tè verde.[1]

Castella taiwanese

Le Castella furono introdotte per la prima volta a Taiwan durante l'era di Taiwan sotto il dominio giapponese. Nel 1968, Ye Yongqing, il proprietario di una panetteria giapponese a Taipei chiamata Nanbanto, ha collaborato con la società giapponese Nagasaki Honpu per avviare un'attività castella.

La castella in stile taiwanese è generalmente più simile a un soufflé rispetto alla varietà giapponese con un centro simile a una crema pasticcera. Una specialità di Tamsui è una semplice torta castella a forma di cuscino. La castella in stile taiwanese è stata introdotta in Giappone.
