Ciabatta (pelafalan dalam bahasa Italia: [tʃaˈbatta], secara harfiah berarti slipper dalam bahasa Inggris atau "sandal")[1] adalah roti putih khas Italia yang terbuat dari tepung terigu atau tepung gandum, air, minyak zaitun, ragi, dan garam. Roti ini dibuat pertama kali pada tahun 1982 oleh penjual roti di wilayah Verona, Veneto, Italia, sebagai respon dari populernya roti Prancis, baguette pada masa itu. Ciabatta berbentuk agak memanjang, lebar, dan rata, dan dipanggang dalam banyak variasi.

Ketika panino didefinisikan sebagai sandwich berdasarkan jenis roti yang dipakai untuk membuatnya, sandwich panggang yang dibuat dari potongan kecil dari ciabatta dikenal dengan nama panini (bentuk plural dari kata panino) di luar Italia.

Italia

Ciabatta pertama kali diproduksi tahun 1982 oleh Arnaldo Cavallari, yang menyebut roti tersebut dengan nama ciabatta polesana berdasarkan Polesine, area di mana ia tinggal. Resep ini kemudian dilisensikan oleh perusahaan Cavallari, Molini Adriesi, kepada tukang roti di 11 negara pada tahun 1999. Cavallari dan pembuat roti lainnya di Italia prihatin dengan popularitas sandwich yang terbuat dari roti baguette yang diimpor dari Prancis, yang membahayakan bisnis mereka dan mulai mencoba membuat alternatif Italia untuk membuat sandwich. Resep ciabatta muncul setelah beberapa minggu mencoba variasi resep roti tradisional dan terdiri dari adonan basah dan lembut yang dibuat dengan tepung gluten tinggi.[2]

Banyak wilayah memiliki variasi mereka sendiri terhadap resep asli atau roti yang mendekati ciabatta dan sudah diterima sebagai varian dari ciabatta; ciabatta dari area sepanjang pinggir danau Como punya kerak yang renyah, teksturnya agak lunak, keropos, dan ringan saat disentuh. Ciabatta yang ditemukan di Tuscany, Umbria, dan Marche bervariasi dari roti yang memiliki kerak padat dan remah padat, hingga roti yang memiliki kerak lebih renyah dan tekstur lebih terbuka, dan di Roma, sering dibumbui dengan marjoram.[3]

Variasi baru resep terus dikembangkan. Ciabatta Wholemeal dikenal sebagai ciabatta integrale, dan ketika susu ditambahkan ke adonan, itu menjadi ciabatta al latte.[3]

Negara lain

Roti Ciabatta diperkenalkan ke Inggris pada tahun 1985 oleh Marks & Spencer, kemudian ke Amerika Serikat pada tahun 1987 oleh Orlando Bakery, sebuah perusahaan di Cleveland.[2][4] Tiga tukang roti dari Italia pergi ke Orlando Bakery untuk mengembangkan produk untuk produksi massal. Mereka berhasil memperkenalkan roti segar, dan kemudian, versi beku. Itu dengan cepat diikuti pembuat roti ke seluruh Amerika Serikat. Bentuk remah yang lebih terbuka, yang biasa di Amerika Serikat, dibuat dari adonan yang sangat basah, sering kali membutuhkan mesin pengulen, dan starter biga atau adonan kasar pertama.
