סיר טיגון ללא שמן (באנגלית: Air fryer) הוא כלי בישול המיועד לטיגון מזון תוך שימוש מופחת בשמן (או ללא שמן כלל). המזון המיועד לבישול נמרח בשמן ומוכנס אל המכשיר, אשר מחמם את האוויר לטמפרטורה גבוהה ומניע אותו סביב המזון במהירות גבוהה. האוויר הנע יוצר על פני המזון ציפוי פריך כתוצאה של תהליך תגובת מייאר, בדומה לתהליך המתרחש בזמן טיגון בשמן עמוק.[1][2]

חלק מהיצרנים של מכשירי הטיגון ללא שמן אשר נמכרים כיום בשווקים טוענים כי המכשיר חוסך כ-80% משמן הבישול שהיה משמש לטיגון עמוק מסורתי של אותם המאכלים.

רקע

החברה הראשונה שרשמה את הפטנט על מכשיר הטיגון ללא שמן הייתה חברת TurboChef Technologies Inc האמריקנית, בשנת 2005.[3] ‏המוצר המקורי היה מורכב ויקר יחסית, ונועד בשל כך בעיקר לשימוש בתעשיית האירוח.

חברת פיליפס פיתחה בהמשך את מכשיר הטיגון ללא שמן לשימוש ביתי, והחלה למכור אותו לראשונה במהלך שנת 2010.[4] לאורך השנים החלו חברות שונות לייצר ולמכור גרסאות משלהן למכשיר, בגדלים ודגמים שונים.

פעולת המכשיר

טיגון בשמן עמוק הוא שיטת בישול נפוצה למאכלים רבים ברחבי העולם: המזון מוטבע ישירות בתוך כלי שמן רותח, והשמן הנוגע בכל צידיו של המזון בו זמנית מעביר אליו חום במגע ישיר. המגע בין השמן הרותח (בטמפרטורה של כ-170 מעלות צלזיוס) ופני השטח של המזון גורם לתגובת מייאר, המשבחת את טעמו ומרקמו של המזון וגורמת לבישול מהיר ואחיד של תוכנו. מאידך, לשיטה זו ישנם גם חסרונות רבים, במיוחד בהקשר של בישול במטבח ביתי: שימוש בכמות גדולה של שמן, בזבוז משמעותי של שמן בטיגון ארוחות קטנות או בתדירות נמוכה, ריח חזק של שמן שרוף הנשאר באוויר לאורך זמן, ולכלוך שעשוי להצריך ניקוי אינטנסיבי בסבון.

תנור מטבח רגיל, המופעל בגופי חימום, אמנם פותר את מרבית החסרונות האלה; אך אינו מסוגל להגיע לתוצאה סופית דומה בבישול בשל השיטה בה הוא מחמם את המזון המתבשל בתוכו. גופי החימום מתחממים לכ-200 עד 300 מעלות צלזיוס, אך אינם באים במגע ישיר עם המזון. במקום זאת, תנור חשמלי מחמם את המזון על ידי פליטת כמות רבה של קרינה תת-אדומה, הפוגעת במזון רק בצידו הפונה אל גוף החימום. תוכנו של המזון, אשר אינו חשוף ישירות לקרינה, מתחמם לאט בהרבה, ובצורה לא אחידה. תגובת מייאר מתרחשת גם כאן, אך במזונות רבים הקרינה העזה מתחילה לגרום נזק לפני השטח של המזון עוד לפני שתוכו מבושל כהלכה, ובזמן זה המזון מתחיל להתייבש במהירות ולהישרף.

סיר טיגון ללא שמן מחבר בין הטכנולוגיה של התנור החשמלי לבין שיטת החימום הישירה של טיגון בשמן עמוק, תוך שימוש באוויר לוהט כתחליף לשמן הרותח. כאשר המכשיר מופעל, גוף החימום מחומם לטמפרטורה של כ-300 מעלות צלזיוס, בדומה לתנור חשמלי רגיל. בשונה מתנור, סיר טיגון ללא שמן מצויד במאוורר פנימי חזק המזרים אוויר על פני הסליל במהירות גבוהה, ומשם ישירות אל המזון. האוויר המחומם מגיע אל המזון כשהטמפרטורה שלו עדיין גבוהה (קרוב ל-170 מעלות צלזיוס) ויוצר עמו מגע ישיר. מגע זה בין האוויר הלוהט והמזון גורם לתגובת מייאר אחידה ומהירה, בדומה לשמן במהלך טיגון עמוק. האוויר גם חודר למקומות שאינם חשופים, ובמאכלים מסוימים גם עמוק לתוך המזון עצמו. עקב כך, תהליך הבישול נשלם זמן רב לפני שפני השטח של המזון מתחילים להישרף. על מנת להבטיח שהבישול יהיה אחיד, המשתמש נדרש לנער את סלסילת המזון המתבשל מדי פעם במהלך הבישול. מכשירים מתקדמים יותר כוללים מנוע פנימי המנער או מערבב את המזון באופן אוטומטי.

בישול מזון במכשיר אפשרי ללא שמן כלל; אך כדי להגיע לתוצאה הדומה יותר לטיגון עמוק ניתן למרוח את המזון בשמן לפני הטיגון. נטיפי השמן ונוזלים אחרים מן המזון מתנקזים אל תחתית המכשיר, ובדרך כלל יש צורך לנקותם באופן ידני.
