בשר קנגורו הוא בשר לאכילה שהוכן מקנגורו. בשר קנגורו מיוצר באוסטרליה ומיוצא ליותר מ-60 שווקים מעבר לים.

בתקופה שלפני הגעת המתיישבים האירופיים לאוסטרליה, שימש הקנגורו כמקור מזון עיקרי עבור הילידים האבוריג'ינים. כיום, ממשלת אוסטרליה מאפשרת ציד מבוקר של מרבית מיני הקנגורו.

הקנגורו ניצוד בטבע רק באזורי ציד מאושרים ומכסות נקבעות כדי להבטיח את קיימות אוכלוסיות הקנגורו. אם המספרים מתקרבים לסף המינימום, אזורי הציד נסגרים עד שהאוכלוסייה מתאוששת. בנוסף על כך, על מנת להבטיח סטנדרטים גבוהים הן של הומאניות והן של היגיינת מזון, ציידי קנגורו נדרשים לרישיון מיוחד. בשר שמיוצא אל מחוץ לגבולות המדינה נבדק על ידי שירות ההסגר והפיקוח האוסטרלי (AQIS).

בשר קנגורו עשיר מאוד בחלבון ודל מאוד בשומן (כ-2%). לבשר קנגורו יש ריכוז גבוה מאוד של חומצה לינולאית מצומדת (CLA) בהשוואה למזונות אחרים. ל-CLA יוחסו מגוון רחב של יתרונות בריאותיים. בשר קנגורו מעובד גם למזון עבור חיות מחמד. בשל תכולת השומן הנמוכה שלו, לא ניתן לבשל בשר קנגורו באותו אופן כמו בשר של בעלי חיים אחרים, והוא בדרך כלל מבושל לאט או מוקפץ במהירות.

מכסות

מכסות הציד נקבעות בנפרד על ידי הממשלות של המדינות או או הטריטוריות באוסטרליה, אך כל תוכניות הציד המסחרי חייבות להיות מאושרות על ידי ממשלת אוסטרליה. לא כל המינים מותרים לציד, אלא רק אלו שאוכלוסייתם אינה נמצאת בסכנה. המינים המותרים לציד הם: קנגורו אדום, קנגורו אפור מערבי, קנגורו אפור מזרחי ו-וולארו מצוי. המכסות הן בדרך כלל בין 10% ל-20% מאוכלוסיית הקנגורו המוערכת. בפועל, בדרך כלל הציידים מנצלים פחות מחצי מהמכסה המותרת.[1]

ביקורת

ציד ואכילת הקנגורו זכה לביקורת בידי פעילי זכויות בעלי חיים.[2] מנגד, ציד הקנגורו נתמך על ידי מגוון רחב של אקולוגים מקצועיים באוסטרליה. קבוצות כמו האגודה האקולוגית של אוסטרליה, אגודת חיות הבר האוסטרליות ואגודת היונקים האוסטרלית הצהירו על תמיכתן בציד קנגורו. לטענת ארגונים אלו, ביסוס מערכת הייצור החקלאית של אוסטרליה על בעלי חיים מקומיים במקום על בעלי חיים מיובאים כמו כבשים, מציע יתרונות אקולוגיים ניכרים לשטחי המרעה הדלילים בלאו הכי של המדינה, ויכול לחסוך בפליטת גזי חממה.[3][4]
