באביק (ברומנית: Babic) הוא סלמי מיובש גולמי רומני, במקור ממחוז בוזאו. בדרך כלל מכינים אותו מבשר חזיר ובשר בקר, מתובל בהרבה פלפל ופפריקה, דחוס, מיובש ומעושן.[1]

אטימולוגיה

המונח babic מגיע מהמקבילה הבולגרית, babek, ככל הנראה נגזרת מבבא, כלומר סבתא. ניתן לפרש את שם הנקניק כסלמי של סבתא.[2]

היסטוריה

באביק הופיע במחוז בוזאו עם הגעתם של מהגרים בולגרים למונטניה במאה ה-17. בזמן שהממשל של האימפריה העות'מאנית ניסה להחזיר פליטים בולגרים מוולאכיה, רבים מהם טענו שהם סרבים, ששפותיהם היו של המשפחה הסלאבית ועם פונטיקה דומה. מסיבה זו, באביק ידוע גם בשם "באביק סרבי".[2] [3]

תיאור

עם טעם חריף שמשתנה בין מתון לעז בהתאם לכמות הפלפל החריף בשימוש, הסלמי המסורתי הזה נאכל בדרך כלל כמתאבן ולרוב מוגש עם שנאפס שזיפים (צויקה או סליבוביץ), יין אדום או בירה קרה. ניתן להשתמש בבאביק גם במאכלים רומניים שונים, כמו מרקים, חביתות, פילאפים או נזידים. אורך הבאביק הוא כ-40 ס"מ והמרקם צריך להיות יציב.[1] [4]

הכנה

בשר בקר וחזיר טרי (לפעמים גם בשר כבש) נטחן דק, לשים אותו מספר פעמים, מתובל במשחת פלפלים או פפריקה חריפה או מתוקה. המעטפת המשמשת לייצור הבאביק היא המעי הדק של עגל (לפחות 200 ק"ג אך לא יותר מ-350 ק"ג במשקל לפני שחיטה) מנוקה ומומלח היטב במשך 3-5 ימים. לאחר המילוי, קושרים היטב את הסלמי בקצוות בחוט ומניחים בין שני לוחות עץ עליהם מניחים משקולות ומשאירים אותו למשך 2–3 ימים (מכאן צורתו האופיינית) ולאחר מכן מניחים לייבוש 5–7 ימים. לבסוף, הוא מעושן קר במשך מספר שעות.[5][6]
