Propionibacterium

Propionibacterium é un xénero de bacterias grampositivas, con forma de bacilo denominadas así polo seu peculiar metabolismo no que forman ácido propiónico utilizando un encima transcarboxilase pouco usual.[3]

Os seus membros son principalmente parasitos facultativos e comensais dos humanos e outros animais, e viven dentro ou arredor das glándulas sudoríparas, glándulas sebáceas, e outras áreas da pel. Son moi comúns e non causan problemas á maioría da xente, pero están implicadas na acne e noutras condicións da pel.[4] Un estudo atopou que os Propionibacterium eran os microorganismos máis prevalentes asociados á pel humana (ver flora da pel).[5]

Os membros do xénero Propionibacterium son moi utilizados na produción de vitamina B12, compostos tetrapirrólicos, e ácido propiónico, e nas industrias do queixo e probióticos.[6]

A cepa Propionibacterium freudenreichii subsp. shermanii utilízase para facer certos tipos de queixo como o Emmental, xa que producen burbullas de CO2 que orixinan os ollos do queixo, e danlle un certo aroma e sabor.[7]
