Japaninpyökki (Fagus crenata)[3] on pyökkeihin kuuluva kesävihanta puu.

Ulkonäkö ja koko

Japaninpyökki kasvaa jopa 35 metrin korkuiseksi. Sen latvus on tiheä ja pyöreä, kaarna vaaleanharmaa ja sileä. Lehdet ovat soikeita ja sahalaitaisia, 7,5–15 cm pitkiä. Lehtien syysväri on keltainen tai kellanruskea. Kukat ovat pienet ja mitättömän näköiset. Pähkinät ovat kolmikulmaisia.[4]

Levinneisyys

Nimensä mukaisesti japaninpyökki on kotoperäinen Japanissa, ja se on yhdessä mongoliantammen ohella japanilaisten lehtimetsien tärkeimpiä puulajeja.[5] Se suosii hiesu- ja hiekkamaita, jotka läpäisevät hyvin vettä.[4]

Käyttö

Japaninpyökin nuoria lehtiä voi syödä raakana. Lisäksi sen öljyisiä siemeniä voi syödä pieniä määriä raakana tai kypsennettynä; suurempina määrinä ne ovat myrkyllisiä. Paahdettuja siemeniä voidaan käyttää myös kahvin korvikkeena. Siemenistä voidaan uuttaa myös ruokaöljyä.[6]
