SlimCado is a variety of avocado that is grown in Southern Florida in the U.S.A[1]. It comes in a variety of shapes and sizes, with smooth or bumpy skin. Generally large fruit they can weigh up to four pounds and can grow up to thirteen inches long. In contrast to their dark-skinned, smaller Hass avocado counterpart, SlimCado avocados are green-skinned, larger, and lower in fat and calories. SlimCados do not brown as they ripen and yield to gentle pressure when ripe. They are not genetically modified or GMO. They tend to have a light taste and are often used in salads and soups. [2].
The SlimCado will not ripen in a refrigerator and is best left to ripen out on a counter, away from direct sunlight. Be aware of its proximity to bananas and apples. Fruits naturally emit ethylene gas which hastens ripening[3]; apples and bananas are high producers of that gas. Therefore putting a SlimCado (or any avocado) in a paper bag with an apple or a banana will make the avocado ripen faster[4]. Once ripe, the avocado should be used within one to two day. Refrigeration at this point helps the fruit stay fresh.
SlimCados are a seasonal product, available during the months of June through January.
History
SlimCado avocados are native to Mexico and Central and South America. South Florida started growing them in the late 1800’s. SlimCados are considered part of the West Indian or Guatemalan family of avocados.

Nutritional Information
They are low in fat with no cholesterol[7]. SlimCados are a good source of protein, potassium, iron, and vitamins C and E.
Growing SlimCados

SlimCado trees are alternate year bearing, meaning one year will have a high yield and the next a low. SlimCados like to be grown at sea level in humid climates that don’t sustain long periods of temperatures below 32 degrees.
