How Many Methods Again!?
"There are two main methods..." and then the article goes on to seemingly present three different methods. Is there a typo here, or just is this written in a somewhat confusing style?

Yah I agree this is confusing. However, I believe the two main methods refer to what you're starting with. i.e. substance with or without calcium. someone should clear this up.

Looks like the person who made that edit, Roux is no longer on wikipedia. Looks like it is up to us to change the language!
