Composite application seems to center around web services, and does not emphasize the searching, matching, and assembling/fabrication processes of "Application Fabrication". It seems "Composite Application" is a subset/aspect of Application Fabrication.

I disagree. You can build composite applications using any technology, it doesn't have to be SOA based.
